I notice there are a number of blocks under Forms that are not based on Form objects. The layout produced is great, however I am unsure how to proceed in having the submit button gather the entered information and email it to a specified address.

Is there any reference material on how to do this without a form object?

If the block was created with a layout grid then you can use the 'enable form' option to turn it into a form.
