How can I create an extension which, when double-clicked, displays a window with custom properties ?

I'm sorry, this is not possible with Extension Builder.

This would require you to write a script such as javascript/jQuery to implement what you ask, then bring the script into the ext builder. Unfortunately we cannot assist you with writing this.
