If the website made with 100% layout grids, does it even need a breakpoint (default is 480) ? what should happens if set to "0"?
Doesn't seem to make a difference.

The breakpoint determines when a layout grid flips from a horizontal layout to a stacked (vertical) layout. If you set to 0, it will always stay in a horizontal layout.
Do you need to use it? If depends on what content you have in the grid.
