colors and font changes in Apple

Can anyone tell me why the colors and font changes in Apple are different from Android and Windows?

More importantly or can I prevent it?

Colours don't change as it is a universal value. It is your monitor/phone display.

As for fonts, Safari and indeed mobile browsers will interpret the fonts differently and disregard the weight.
Running WYSIWYG Web Builder since 2007...

You you use Google Fonts then they should be rendered the same in most browsers.
