Tools -> Options -> General -> Automatically scale new objects in other breakpoints

Switch to the breakpoint and then select a different font size.

This doesn't work with list items in a card but works well with text and buttons.
It's not too serious but I would have liked.

I can confirm that font sizes in list items are not responsive in breakpoints.

You are correct, this functionality is currently only available for text, button, header and footer card items.
