Ecommerce Catagories

I'm looking at moving my current prestashop and building a shop based on the inbuilt WWB eccommerce tools.
Before I dive head first like I normally do, is it possible to setup different catagories, i.e. by product and brand.
For example if I sell shampoo by different brands and someone wants to search by brand only, what would be the best way to do this, i.e. setup a page for each brand? and whatabout if they want to see all the shampoos regardless of brands, is this possible? would I have to also create a separate page with all the brands listed? am I thinking the right way, if so it seems quite a lot of work to do this especially if you have multiple ranges.
I'm looking into vibracart.
Can paypal check for products that are not in stock, Ive had a play with it and cannot see any options to do this, I'm guessing this is why a database ecommerce cart does?

WWB does not have its own webshop. Instead it integrates with third party eCommerce solutions.
I do not know all the exact features of each eCommerce solution, so you will need to check this yourself.

PayPal cannot check for products in stock.

Have you tried ECWID? WWB supports it. I personally have not tried it.
